2 oz. Casamigos Reposado tequila
1 oz. pineapple juice
5 oz. fresh lime juice
8–10 coriander leaves
5 oz. simple syrup (method below)
Optional: ½ thick rim of sugar, salt (equal parts)
For the simple syrup, bring sugar and water to the boil; simmer until the sugar is dissolved (approx 3 minutes). Remove from the heat and let cool completely.
Combine all of the ingredients into a tin shaker. Add ice and shake vigorously for 8–10 seconds. Strain into a rocks glass and add fresh ice. Garnish with 2 pineapple leaves.
