Do you take your cocktails seriously? You've come to the right place. Shoreditch's Umbrella Workshop have invented a spring whisky sour you can make at home
If you consider yourself a cocktail connoisseur you’ll be well acquainted with The Umbrella Workshop, but for those who haven’t heard of it, allow us to fill you in. Put simply, it’s where Shoreditch‘s cocktail aficionados hang out – so if you want to sample East London’s finest concoctions and meet the mixologists behind them, this is the place to come.
Make no mistake, this is not a shabby pop-up and, we don’t mean to intimidate you, but it oozes effortless cool. The sister project from the team behind Bethnal Green’s The Sun Tavern and popular speakeasy bar Discount Suit Company, The Umbrella Workshop serves as an interactive, developmental tasting room, bar and shop. Inside, spectators are invited to take a seat at the intimate 12-seater bar housed inside a 19th-century atelier, before choosing from an array of unique and surprising tipples that change on a daily basis. Look up to discover the floor-to-ceiling display of spirits, home to the Irish whiskies used in tastings every weekend, as well as an impressive array of poitín and agave.
Located on Boundary Street, The Umbrella Workshop is slap bang in the heart of East London’s thriving food scene, with restaurants such as Brat, Manteca and Rochelle Canteen right on its doorstep, making it a popular destination for pre- and post dinner drinks. Come the summer, you’ll spot a keen crowd sitting on hay bales outside and on weekends you’ll be lucky to get a table. So, to bring a taste of its award-winning mixology to homes across the capital, we asked head of drinks development Dan Ghazal to whip up something new.
The result? The Crimson and Clover cocktail. Ghazal says: “This is a springtime whisky sour, full of fresh and floral hedgerow flavours, like woodruff, meadowsweet and raspberry.” While this ingredient-intensive recipe isn’t for the casual at-home mixologist, it’s one definitely worth making the effort for. Ingredients

Dewar’s 12 Year Old whisky 25ml

JJ Corry Fierfield Barberry Irish whisky 10ml
-
El Bandara Alfresco 10ml

Cambusier Liqueur de Framboise (raspberry syrup) 10ml

Woodruff and meadowsweet Syrup 20ml
-
Lemon juice 20ml
-
Egg white 15ml
Method
- Shake all ingredients together and strain into a chilled coupette.
- Garnish with fresh raspberries.
