A hidden gem among Mayfair’s crowded hotel scene, you’d be forgiven for thinking The Biltmore has been knocking about for as long as Brown’s (since 1837). After all, it oozes old-age glamour, sophistication and service that we’ve come to expect from London’s seasoned stalwarts but, in fact, it only opened in 2019.

When it did finally open its doors, though, it quickly established itself as one of London’s best five-star hotels. Overlooking Grosvenor Square, the 307-key property combines exquisite contemporary accommodation, views of the capital’s skyline, bespoke décor and quintessentially British amenities by Penhaligon’s. Foodies can indulge in an array of dining options curated by chef Luis Campos, from seasonally-driven menus at Café Biltmore and theatrical dishes at Grill 88 steakhouse, to the epitome of British culture with afternoon tea in The Tea lounge and gratify evenings at The Pine Bar, featuring an impressive collection of the finest wines, spirits, cognacs and, of course, cocktails.

It’s at the latter we found our latest Cocktail of the Week. Surrounded by the sleek and stylish confines of the mahogany and ruby hued bar, cocktail connoisseurs should be aware that the vintage menu starts from £75 per drink – but serves up delights such as the 1960’s negroni and one of the most expensive cocktails in London: the Biltmore Rye Manhattan, featuring 1920’s Biltmore Rye and 1960’s Cinzano Vermouth, that will set you back £450.

The speciality cocktail list, however, is equally impressive without the hefty price tag. The bartenders make a killer Vesper Martini, as well as an Old Fashioned using a homemade signature syrup. But nothing beats the refreshing simplicity of the No.3 Gimlet: zesty and neat, mixing only gin and limes. So if you’re in need of a bank holiday pick-me-up, or want to wow Easter guests with a deceptively simple serve, here’s how you to create the No.3 Gimlet at home.

No.3 Gimlet

  • Serves 1

Ingredients

  • No.3 Gin 50ml
  • Lime cordial 10ml
  • Lime juice 5ml

Method

  1. Add the gin, lime cordial and lime juice to a tumbler with ice.
  2. Stir with a long spoon for 30 seconds or until liquid is chilled.
  3. Strain into a martini or Nick & Nora glass.
  4. Garnish with lime peel.
