It’s time to take this cocktail series international – and what better way to start than with a taste of sunny Los Angeles? We’ve gone behind the bar at the legendary Hotel Bel-Air to discover the recipe for one of its most famous tipples: the Bespoke Negroni.
Located just outside Beverly Hills, the Dorchester Collection five-star property has hosted a number of notable guests since it opened in 1946, from Grace Kelly and Audrey Hepburn to Bette Davis and Elizabeth Taylor – all of whom have often graced its renowned bar and lounge. Providing a stark contrast to the coral hues its famous for, the bar interiors feature a moody, dark palette, striking fireplace and grand piano where live musicians perform every evening.
Heading up the bar is director of food and beverage Michah Paloff who, together with his team of talented mixologists, has created an inventive cocktail menu utilising the freshest ingredients of the season to give guests a taste of something a little bit different. But one mainstay that doesn’t change throughout the year is the Bespoke Negroni. He says: “We barrel age our negroni in oak casks for six weeks, which smooths out the cocktail and results in a rich, deep flavor. It is one of our most popular cocktails and is also wonderfully simple to prepare at home.”

Bespoke Negroni
Ingredients

Hendrick’s Gin 30ml

Carpano Antica 30ml

Campari 15ml

Aperol 15ml

Orange bitters One dash

Lemon zest To garnish

Orange peel To garnish
Method
- Combine all of the ingredients in a mixing vessel and stir with ice.
- Strain and pour over a large ice cube in a rocks glass.
- Finish with a garnish of orange peel.
