It gets to this point in Twixmas where you may need something to awake you from your festive, food-induced slumber. While we can think of few better places to spend the odd, in-between period from Christmas to New Year’s Eve than on the sofa watching all of the period dramas and films that we missed this year, you may be craving a cocktail to kickstart the senses, and give your gluttonous palette a good refresh. And what better way do so than a spicy paloma?

For this, we’ve tapped the mixology nous of Stefano Chila, general manager of one of London’s newest cocktail bars: Luum. The sophisticated cocktail bar and energetic late-night lounge, which opened just last month at 19 Motcomb Street in Belgravia, offers a unique blend of masterful mixology, soulful music, and an ambiance reminiscent of a bygone era. Luum, meaning ‘earth’ in Mopan Mayan, serves a cocktail menu celebrating the natural world, with three signature concepts, each offering a distinct style.

Our pick of the crop is Sunset Bliss – an apt cocktail to serve as the sun sets on 2024. Chila says: “This is our take on the classic paloma, elevated with an exotic twist by choosing to use pineapple and hibiscus, which adds some floral notes as well as honouring the flavours and flair of Mexico. Taken from the ‘Above the Ground’ chapter on our menu, which celebrates light spirits, vibrant and zesty flavours, and fruits that grow across the land, Sunset Bliss offers a refreshing and refined cocktail.” Discover how to make it at home below – and make sure you pay Luum a visit once 2025 is in full swing.

Sunset Bliss

  • Serves 1

Ingredients

  • Enemigo Blanco tequila 50ml
  • Lime juice 15ml
  • Grapefruit juice 50ml
  • Pineapple and almond soda 50ml
  • Hibiscus agave syrup 20ml
  • Angostura bitters 3 drops
  • Slice of grapefruit To garnish

Method

  1. Add all ingredients into a highball glass with ice and stir gently.
  2. Garnish with a slice of fresh grapefruit and serve.
