Cocktails and caviar? Yes, please. And, luckily, London has just the place. The younger, cooler little sister to Bob Bob Ricard – the opulent Soho restaurant with champagne and caviar quite literally on tap – Bébé Bob opened just opposite on Golden Square last autumn to offer a more refined rotisserie menu and, of course, a caviar offering specialising in baerii, oscietra and shrenkii caviar served fresh tableside. That’s date night sorted, then.

However, while Bob Bob favours champagne, Bébé Bob looked to cocktails to complete its menu – and who better to create the menu than a world-famous mixologist? Tapping into the creative nous of Mr Lyan, otherwise known as Ryan Chetiyawardana, the new menu was designed to capture the restaurant’s bold spirit and sense of fun, while taking inspiration from its Art Deco décor by Daniel Monk.

Menu highlights include Frites Royale – a twist on Kir Royal – which pays homage to Mr Lyan’s favourite Bébé pairing: French fries with a glass of ice-cold champagne. Elsewhere, the Bébé Lyan Martini is made with Amalfi lemon and frozen vodka, served with your choice of lemon twist or olives and pickles, and the Chicken Bone Negroni is a nod to the iconic bloodshot cocktail created at his London bar, Super Lyan. Pair with small plates of Schnuggets – golden chicken schnitzel nuggets – served with caviar or trout roe, and the lemon and caviar doughnut, filled with lemon curd, dusted with sugar and topped with the finest Oscietra caviar, for the full experience.

Unsurprisingly, much of the cocktail menu uses state-of-the-art mixology techniques to create its stand-out servings, but when we asked Mr Lyan to create a simplified recipe that can be made at home, he did, of course, deliver. Recipe

Mirasol Margarita

  • Serves 1

Ingredients

  • Tapatio Blanco Tequila 40ml
  • Lucky Orange Liqueur 20ml
  • Sugar syrup 10ml
  • Samphire stems 3-4
  • Tabasco Three dashes
  • Slice of melon To garnish

Method

  1. Muddle the samphire in the bottom of a shaker and then add all the ingredients.
  2. Shake very hard witch cubed ice until the shaker is frosted
  3. Double strain into a chilled coupette.
  4. Garnish with melon.
