One restaurant that's taken the clever less-is-more approach to its latest cocktail is Hoppers, serving the punchy Mango Gimlet for summer

While there’s something to be said for intricate cocktails concocted with thoughtful methods and dozens of ingredients, the art of mixology can also be a simple one. Thanks to the vast array of flavours at our fingertips from gins, sakes, whiskies, wines and more, it’s relatively easy to create a stylish serve in minutes and with minimal work – making these simple cocktails a go-to for impressing guests at summer dinner parties.

One sundowner spot that’s taken the less-is-more approach to its cocktail menu this summer is Hoppers, the King’s Cross-based restaurant famous for its Sri Lankan and south Indian flavours. Its Mango Gimlet, created by bar manager Martin Balo, is full of fresh, tropical notes delivered via just two ingredients: mango vodka and lime cordial (with a sherbet salt rim for a touch of pizzazz).

Inspired by the zesty, punchy classic gimlet, where the focus is the main spirit flavour profile balanced with a touch of lime cordial, our latest Cocktail of the Week swaps gin for an Indian-inspired vodka: Desi Daru Mango. Balo says: “The other ingredient of this drink is a homemade lime cordial, made of fresh lime juice, lime zest and sugar. Because of the fruity vodka, instead of a classic lime cordial recipe, which is only lime juice and sugar, we added some additional lime zest to it, which gives a fresh bitterness to the drink. The extra lime peel brings the flavours of this cocktail back to the classic gimlet taste, rather than turning into a fruity martini-style serve.”

Currently a favourite at the restaurant and, as Balo says, best enjoyed in the sun, here’s how to make this simple but extremely effective Mango Gimlet by Hoppers at home.

Recipe

Mango Gimlet

  • Serves 1

Ingredients

  • Desi Daru Mango Vodka 50ml
  • Homemade lime cordial* 20ml

Method

  1. Add vodka and lime cordial into a mixing glass, fill with ice and stir it for 15 seconds.
  2. Then, using a strainer, pour the drink into a chilled martini glass and enjoy!

Recipe

Homemade lime cordial*

Ingredients

  • Fresh lime juice 400ml
  • Sugar 150g
  • Lime zest Two, whole

Method

  1. Add the sugar, lime juice, and grated zest of 2 limes into a bowl and stir until the sugar dissolves.
  2. Pour liquid into a jug and put it in the fridge for an hour to allow the zest to infuse.
  3. Remove from the fridge and strain the liquid. Store in an airtight container.
