As the days get darker and sunny spells become rarer, it’s time to get inventive with ways to bring a taste of summer into your life. While not all of us are lucky enough to book a winter sun break – which is by far the easiest way to top up your vitamin D levels – it’s fair to say most Brits are well versed in dark, gloomy British winters and, therefore, hacks to keep spirits high. And London’s best bars are no exception.
While spring seems a million miles away, One Aldwych – one of Covent Garden‘s chicest hotels, and home to the art-led Lobby Bar – has looked to the sun for inspiration for its latest cocktail: the Gooseberry Margarita. “As the weather gets cooler, our fabulous Gooseberry Margarita keeps the sunshine alive in every sip,” says head bartender, Roberto Di Paolo. “The vibrant notes of tequila and pea vodka dance harmoniously with the tangy sweetness of gooseberry and elderflower, creating a refreshing cocktail that perfectly bridges the vibrant freshness of summer with the crisp feeling of autumn.”
However, there’s much more to this cocktail than meets the eye. The Gooseberry Margarita is part of the hotel’s second Gallery menu – featuring 10 cocktails inspired by 13 hero artworks from the hotel’s 400-strong collection – and pays homage to artist Richard Bartle’s 1990 Beach Scene painting. He says: “The painting was inspired by the idea that a holiday is sold as an expression of personality and a chance for unique life experiences. The scene depicts a crowded beach surrounded by water. But, seeing all those people sweltering in the sun, I always thought how thirsty they looked, and was reminded of the saying ‘water, water, everywhere, and not a drop to drink’.”
They say a picture says a thousand words – and in this case, it creates a rather delectable cocktail. Gooseberry Margarita
Ingredients

Olmeca Altos Plata Tequila 20ml

Pod Pea Vodka 20ml

Capreolus Gooseberry Eau de Vie 10ml

Sipello Bittersweet Aperitif 10ml

Elderflower cordial 25ml

Lime juice 25ml
-
Cucumber, sliced To garnish
Method
- Pour all ingredients into the shaker and add ice.
- Shake for 12 seconds.
- Once cold, strain into chilled tumbler glass filled with a large ice cube.
- Garnish with cucumber and serve.
