Dreaming of a far-flung paradise? We don’t blame you. As London’s inclement summer isn’t delivering on the sunshine front, it’s easy to find yourself daydreaming about palm-fringed, sandy beaches. Alas, if a summer holiday is off the cards this year, why not bring the taste of a tropical destination home instead?
One London bar that’s taken its cocktail cues from South America is Barts, the Chelsea speakeasy, which is inspired by the apartment of fictitious Chicago gangster, Uncle Barts. Step inside to discover an eccentric bar adorned with a taxidermy stag on ruby-red walls, where you can take your pick of outfits from a fancy dress box before sipping cocktails from teacups.
Available throughout August, the bar is serving its Prohibition Palomas menu, which takes its cues from Uncle Barts’ latest travels. During his clandestine escapades, Bart’s unearthed his new summer obsession: the Paloma, crafted with the finest Don Julio tequila, juicy grapefruits, agave and limes, all carefully stashed as he slipped across the border back to the Windy City and then onwards to the UK.
Our favourite is the aptly-named Teq Your Chances, inspired by what is known State-side as a Mexican martini. Darien Topulli, manager of Barts, explains: “This is the perfect combination of an Añejo margarita and a classic paloma. The use of Añejo tequila offers a more oak-forward flavour, which, combined with the fruity and delicate sweetness of hibiscus syrup and the tart grapefruit, make this the perfect bootlegged beverage for the August sunshine.” Discover the recipe below.

Ingredients

Don Julio Añejo Tequila 30ml

Cointreau 15ml

Grapefruit juice 20ml

Monin hibiscus syrup 15ml

Lime juice 10ml
Method
- Combine all ingredients in a shaker with ice and shake.
- Double strain over cubed ice and garnish your glass with a salted rim and a grapefruit wedge.
