Cocktail of the Week: Stay Awhile by Searcys at Battersea Power Station

Inspired by a striking new art installation suspended from the ceiling of Battersea Power Station, here's how to recreate the Stay Awhile cocktail at home

London’s cocktail maestros are constantly searching for sources of inspiration. While negronis and margaritas are all well and good, it often takes something striking for mixologists to create a new concoction from scratch. Accordingly, you’ll find many cocktail menus across the capital are based on a theme, whether it be memories (such as that at the Vesper Bar at The Dorchester), famous quotes (at Velvet by Salvatore Calabrese at The Corinthia), or people (think the Cecil Beaton Bar at Drury Lane Theatre).

However, when Searcys Champagne Bar at Battersea Power Station was in the midst of creating a new cocktail for May, it didn’t have to look far for inspiration. The Grade-II listed building recently partnered with British contemporary artist Claire Luxton and MTArt Agency to create an immersive botanical-inspired art installation, entitled Field of Dreams, for the summer season. Aiming to explore the intrinsic connection between nature, mental health and self-awareness, the towering 12m structure is made from 33 layers of digitally-printed fabric suspended from the ceiling of Turbine Hall A and can be seen from Searcys plush champagne bar. Naturally, it didn’t take the mixology team here long to concoct a cocktail inspired by the artwork. The result? The Stay Awhile.

Designed to reflect the campaign’s botanical theme, Stay Awhile embodies the essence of spring with notes of St Germain elderflower liqueur and Searcys gin to create a smooth base. A touch of lime juice, cucumber and mint adds a refreshing zip, while fresh apple juice crowns the drink. While this tipple is being served at the Battersea bar throughout May, find the recipe below to make it at home whenever you like.


Stay Awhile

  • Serves 1


  • Searcys London Gin 25ml
  • St Germain Elderflower Liqueur 25ml
  • Lemon juice 10ml
  • Apple juice To top up
  • Fresh mint To garnish
  • Sliced cucumber To garnish


  1. Fill a tumbler glass with ice.
  2. Add the Searcys gin, St Germain, and lemon juice to the glass.
  3. Top up the glass with apple juice.
  4. Garnish with a fresh mint and a cucumber slice,
