“This release is beautifully led by European oak sherry seasoned in Jerez de la Frontera”, says Alexander Robertson, global head of advocacy at The Macallan. “It is rare and prestigious, showcasing depth and complexity across a quarter of a century of maturation in exceptional sherry seasoned European oak casks, and has transformed the new make spirit into an exceptional whisky. What’s more, every dram of The Macallan Sherry Oak 25 Years Old has had, on average, 636 quality checks by the whisky mastery team.”
Flavour-wise, the spirit is bold, fruity, and smoky all at once, and surprisingly fresh and vibrant considering its age. Notes of dried orange slices, raisins, sultanas, and apricots with ginger syrup and oak will awaken the senses on the nose, before tasting notes on the palate introduce deeper flavours of black cherry, chocolate and toasted almonds. The lasting finish? A sensational, warming, fruity oak blend.
Handcrafted just twice a year, the whisky’s journey is one requiring patience. “The creation of The Macallan sherry takes about five years, from forest to sawmill, cooperage to Sherry Bodegas,” Robertson explains. “Each cask is built to our exacting standards. In Scotland, these casks are filled with robust, fruity spirit with a cereal note from The Macallan’s curiously small stills.”
“Over the next 25 years, the spirit matures in the cask, integrating the oak, deepening in flavour and colour, drawing tannins and notes of rich oak, crystallised ginger and raisins. Importantly, the whisky evaporates at a rate of about two per cent each year. Upon reaching its peak of maturation, less than 50 per cent of the spirit remains. It is truly rare.”
