Julie's Pumpkin Risotto Recipe

Ingredients

Serves 4-6 as a starter

50g butter
1 onion finely chopped
2 garlic cloves minced
300g diced pumpkin
1700ml vegetable stock
200ml white wine
350g arborio risotto rice
50 g grated parmesan
2 tspn finely chopped chives
30g cleaned black trompette mushrooms
30g toasted pumpkin seeds

Method

Melt the butter in a heavy based sauce pan, add the onion and garlic, gently sweat off for about 10 minutes until translucent
Add the rice and stir for about one minute, add the white wine and cook out until completely absorbed
Add the stock one ladle at a time, stirring the rice continuously and cook for about 15 mins until the rice is ¾ cooked
Add the diced pumpkin and trompette mushrooms and continue to cook until pumpkin is tender
Add the parmesan, stir and serve in bowls topped with toasted pumpkin seeds
